I believe the coconuts are to do with Hindu funerals. They're gifts to the boatmen who carry souls to the afterlife.
Adam is correct. In India one of the most common offerings in a temple is a coconut. They used to put gifts inside the coconuts which would travel to the afterlife. These days they do not put anything in them. It is really very interesting though.
